Most coffee farms in Tolima are small-scale and family-owned, emphasizing traditional and sustainable farming. Tolima's coffee is considered among the best in Colombia, often competing with Huila and Nariño for top honors. This region has been historically affected by conflict, but in recent years peace initiatives have allowed growth and investment in coffee production. This lot has been decaffeinated using the sugarcane or ethyl acetate process, which is a naturally occurring compound found in molasses.
