About this coffee

Colombia Gaitania comes from the ACEDGA cooperative, founded in 2006 by a group of coffee farmers seeking better opportunities for marketing their coffee while maintaining quality. The association is made up of 72 members, including 17 women, located in the Gaitania district of Tolima, Colombia. Farms are situated in the southern Tolima region at elevations ranging from 1,550 to 2,100 meters above sea level, with a total of 300 hectares of certified organic production. Harvest season spans from April to January each year. The cooperative includes a group of 17 women who carefully process the manually handpicked cherries. They employ special techniques to ensure a fruity and delicate flavor profile. Their standardized processes, such as wet milling and fermentations lasting over 48 hours, resulting in unique characteristics that represent the women producers of ACEDGA. This coffee was grown using organic practices by certified organic producers at origin.

At lighter roasts, the cup showcases honey, stone fruit, and vibrant lemon and grapefruit notes, supported by a juicy, coating body. As the coffee moves into medium roasts, sugars shift toward caramel and brown sugar, citrus evolves into a more candied lemon character, and the body becomes rounder and more syrupy. At darker roasts, the profile settles into dark brown sugar, bittersweet chocolate, and toasted marshmallow, with a sweet, heavy finish. Its energetic, balanced character makes it a go-to for any brewing method, whether enjoyed on its own or as a bright, flavorful component in a blend.
