
About this coffee
Peru is home to a wide range of landscapes, from coastal deserts to high mountains and the Amazon rainforest. In the north, the Andes run through the Cajamarca region and converge with the Amazon basin, creating diverse microclimates and growing conditions. Coffee has been cultivated here for more than 200 years, and today Cajamarca represents a significant share of Peru’s total production, supported by generations of producers with deep experience in coffee growing and production.
Farmers from across Cajamarca harvest, depulp, and process their cherries before drying them on patios, raised beds, or tarps. The dried parchment is then delivered to either the main warehouse in Jaén or to local buying stations, where samples are taken, the green is evaluated, and the coffee is tasted before a price is agreed upon and the lots are moved into storage.
Kovachii is created from the highest-quality selections of these smallholder lots. The best coffees are combined to build consistency, then milled and prepared for export.
