
About this coffee
The Mexico Ki-Saya is sourced exclusively from women farmers through Covoya's Café Delas program, an initiative created to help women producers gain greater access to resources, knowledge, and a stronger voice within the coffee industry. Every Café Delas lot is produced entirely by women farmers, and a portion of each sale is reinvested into programs that promote gender equality and support women in coffee-growing communities.
Grown in the highlands around San Cristóbal de las Casas and the nearby community of Tenejapa, the coffee benefits from Chiapas' fertile soils, diverse microclimates, and shade provided by native trees. Over the years, producers have continued to refine their harvesting and processing practices, resulting in consistently high-quality coffees.
Only the ripest cherries are selected before being depulped and fermented for 12 to 17 hours. The coffee is then fully washed and dried on small patios beside the farmers' homes. Before delivery, producers carefully hand-sort the parchment to remove any remaining dried cherries or fruit, ensuring a clean, high-quality lot.
This coffee was grown using organic practices by certified organic producers at origin.
