The farm's micromill sits next to a 150-year-old trapiche, a traditional sugarcane press still in use. A Pelton Wheel turbine on the property's freshwater stream generates 100 percent of the energy that runs the mill and powers a portion of workers' homes. Sonora also logs harvest volumes, farm sections, and drying times for full traceability from tree to export sack.
